Ignition

Why is the charcoal taking a long time to ignite?

Ensure that your fuel is always kept in a dry place. Damp fuel can take a long time to ignite. We recommend natural lump charcoal for best results. Whilst briquettes can be used, they may take longer to ignite due to the noncombustible materials contained inside the fuel.

What type of charcoal should I use?

For optimum performance, we recommend Everdure by Heston Blumenthal natural lump charcoal. The Fast Flame Ignition System can light briquettes at the press of a button, but due to the large variances in ingredients used by different manufacturers, we cannot guarantee their ignition time.

How do I avoid burning on the outer ends and simmering towards to middle.

For even cooking you will need to spread the charcoals in an even layer.

Can I switch the element back on during cooking?

For extra safety, the HUB II, HUB and FUSION have overheat protection, which may prevent the element from re-activating until the barbeque cools down.

How does this work?
If you add more coal during cooking, and press the Fast Flame Ignition button, the element will only activate if the BBQ is below a preset temperature. If it doesn't come on, it usually means the charcoal will light promptly without intervention.

Can I add more charcoal during cooking ?

Yes. The grills are designed to make refuelling easy, though you should refer to your manual to check maximum advised limits.

Should I use an accelerant to start the coals?

No, you do not need to use an accelerant or coals with an accelerant included.

Is the lid on the HUB, HUB II, and FUSION designed to place on top to snuff out the coals? Or is it just a dust cover?

No, it is only to be placed on the BBQ when the coals are extinguished and cold. It can be placed on the bracket as a wind break when in use. If direct grilling, it's good if you have time to put a chicken on the rotisserie as the coals continue to burn. Alternatively, have have a Hot Coal Bin you can purchase to put the burning coals into and extinguish with water when you have finished cooking.

Cooking tips

Can you cook whole pigs on the HUB?

The HUB is engineered to turn up to 40kgs of balanced weight, and will be able to accommodate up to 40 kgs of boned out pork legs, beef rumps or boned lamb shoulders/legs with success every time, a long as it is balanced and secured onto the HUB rotisserie pole.

A whole pig on the other hand, is lop-sided in weight across the body and you will find that 20kg+ pigs will be too long for the entire length of the HUB. For best results, we recommend sourcing a suckling pig that weighs no more than 12kgs - that will take around 4-5hrs of gentle heat (on the highest height setting).

You'll need more concentrated heat under the legs and shoulders section of the pig. The chest/belly will cook quicker, so a little less charcoal in those areas.

Can I leave the Rotisserie rod and Cliplock forks in the storage area once coals are ignited?

Yes. You can always access the storage area of your barbeque, but should take extra care if lit, as the contents may be hot.

How do I remove the rod once the meat is ready?

We always recommend using heat protective gloves when handling the rotisserie. Please ensure to switch the motor off before attempting to remove the rod. Once the motor has stopped turning, lift up the lid on the left hand pole and grab the rod handle securely. With your other hand, grab the opposite end of the pole and gently remove it from the motor drive shaft. Put the meat and rod onto a large preparation area and allow to rest. Once cool, remove the forks and rod from the meat and prepare to serve.

Please remember: Never attempt to remove the rod with only one hand and never remove it whilst the motor is still turning. Failure to follow these steps can result in injury and / or product damage. We always recommend 2 people when removing the rod from the HUB.

Best ways to cool down and safely dispose of the BBQ coal once used?

Coal/ash can take a very long time to cool (up to a day or so). Do not rush the process of removing the coals. It will depend on how much coal you have used as to when it will be cool. Once cooled, you can remove the used coals into a metal bucket with lid. You can put these remaining ash onto the garden or dispose of in the bin.

As the HUB, HUB II, and FUSION do not have a lid how do I know how long to cook for?

You will need to use a thermometer as cooking time depends on how close you get to the coals. Generally, a chicken will take 1hr, if it's not too windy and you have the rotisserie 50% down. The higher the rotisserie, the longer the cook but, you will achieve a more developed smoky flavour. The lower, the quicker. You can build hotter or cooler zones with the charcoal for great temperature control. Our quantum charcoal and woodchip tongs are perfect for this!

Example: 2kg Pork - spread charcoal out to the length of the pork and set rotisserie on height number 2 allow the charcoal burn a little. Massage salt and a little oil into the skin, then cook until 65-70 degrees Celsius.

Technology & features

The handles on the HUB are cool to touch; does this mean I don't need to wear heat resistant gloves?

Cool to touch handles are a great safety feature, but we always recommend using heat protective gloves when operating your FUSION or HUB BBQ.

How much weight can I add on the rotisserie?

The HUB motor is rated to 40kg. Before purchasing meat, it is important to measure the length so you can be certain that it fits on the BBQ rather than concentrating on the weight.

The HUB II is packed with power and will easily hold a sucking pi, just remember to measure the length of the pig before purchasing. If you want to rotisserie meat that contains a large bone, such as leg of lamb, simply ask your butcher to remove the bone and roll it before you taking it home.

How do I set up my rotisserie?

The forks and rods are all stored in the small storage section located at the side of the product. Simply depress each pole to release from the storage position and select one of 3 defined heights.

Get your meat trussed onto the rotisserie rod and secure with the Cliplock Forks.

Insert the end of the rod to rotisserie pole, press the on switch at the front (marked with arrows) and you're off and cooking.

How long can I run the motor for?

We recommend using the HUB II rotisserie for maximum 6 hours at any one time. If you need to cook for longer, please ensure that the BBQ and parts are allowed to cool before starting again.

Can I use an extension cord?

Yes, the retractable 10amp power cord can be connected to an outdoor extension cord. Please do not use an indoor extension cord. Extension cords that do not exceed 10m in length may be used

  • Never use an extension cord in the rain
  • The extension cord must be outdoor rated (12-15 A) and approved

What are the electrical safety recommendations for the HUB?

  • Avoid leaving your appliance uncovered. Continuous exposure to rain, snow or high humidity may lead to premature deterioration and product failure.
  • Regular cleaning and maintenance will help keep your appliance in great working order.

Can the FUSION, HUB or HUB II be used indoors?

No. Like most barbeques, these are designed for outdoor use only.

Cleaning & maintenance

How often should I clean my BBQ?

Once the BBQ has cooled, a simple wipe down is all that's needed. We recommend cleaning your BBQ after every use, but don't use harsh chemicals, or abrasive wire, as this may damage the protective coating on the grills and outer body. To help make cleaning easier, the firebox is designed with minimal angles and joins, which can trap grease. You can also oil grills before and after use to help prevent food sticking.

Can I put the grills and Cliplock Forks into the dishwasher after use?

We do not recommend cleaning these parts in the dishwasher. Due to the various chemical ingredients found in dishwasher detergent, parts may discolour as a result. We recommend warm soapy water with a low chemical content.

How do I clean the stainless steel charcoal grid?

After each use, clean the grid with warm soapy water to remove ash residue.Ash that has built up and subsequently hardened, can trap moisture from the air causing premature erosion and discoloration. Remove any hardened ash with some soapy water and a fine wire brush.

After cleaning, allow the grid to dry and lightly season with some vegetable oil.

Place the part back inside the black tray and cover the barbeque with an Everdure by Heston premium cover.

How do I clean my BBQ grill plates?

Soap and water with a scotch pad or steel wool will work. For stubborn grime, soak the plates in a bucket of warm, soapy water then scrub with a suitable brush. Repeat until clean. Just make sure you clean along the grill and not across it.

Can I use phosphoric based cleaning solution on my grills?

Do not use phosphoric based cleaners as the grills are cast iron with a vitreous enamel coating. Vitreous enamel, also called porcelain enamel, is a material made by fusing powdered glass to a substrate by firing, usually between 750 and 850°C (1,380 and 1,560°F). The powder melts, flows, and then hardens to a smooth, durable vitreous coating. If your porcelain grill grates are really dirty, you can try applying a baking soda solution to them. Make a paste by combining 1/2 cup (90 g) of baking soda with 1/4 cup (59 ml) of warm water. Apply the paste to the grill grates. Let it sit for 20 minutes and then clean it off with a soft bristle grill brush. Make sure you get all of the paste off before you cook anything on the grill, and clean the brush when you're done. You could remove the grates and let the solution soak overnight, if necessary, in a sink or tub. Rinse the solution off, then replace the grates and clean them with a grill brush.

How can I clean below the burners/ ignition?

Warm soapy water is fine but you can also dissolve a dishwasher tablet in warm water and then use that to dissolve the grease and fat.

How do you clean the charcoal tray?

Remove any debris that has ended up in the tray. When it is empty, use warm soapy water or dishwashing liquid to dissolve grease and fat.

Will the cover keep my BBQ dry?

Our BBQ covers, are waterproof and are made of 425 GSM with a waterproof lining. Please be aware that you can get humidity and condensation forming between the cover and the BBQ depending on your climate and location.

Do you empty the tray after each cook and use fresh charcoal each time or do you put them in a hot coal bin, then use a mix of new and old charcoal for the next cook?

You should definitely empty the tray and use fresh charcoal each time. Don't empty the night you cook as they will still be hot. Let it burn itself out and then just use a dustpan and brush to scoop the small amount of dust that's left into the bin the next day.

Where should I store my BBQ?

When not in use, be sure to keep your BBQ in a well-protected area. For the best protection, we recommend covering it with a fitted Everdure by Heston Premium cover, to avoid weather damage.
